Mexican Thistle

Eryngium heterophyllum

Apiaceae Blue White

The groups of flowers with their surrounding bracts make these plants appear to be full of silvery stars. In Texas, you will find the Mexican thistle in the wild only in the Davis Mountains area of the Trans-Pecos, although you might see it in cultivation elsewhere. It is not a thistle at all but rather a member of the carrot family.
